Vijay received his Master’s in Veterinary Biomedical Sciences from Kansas State University and his Ph.D. in Food Science from the Pennsylvania State University. During his Ph.D., he studied the mitigation of intestinal tumorigenesis and cancer cachexia in Apc min/+ mice by table grapes (Vitis Vinifera). He continued his post-doctoral training with Dr. Joshua Lambert in the Diet & Disease prevention laboratory at Penn State. During his post-doc, he studied the impact of fermentation and roasting on the gut health protective effects of cocoa in high-fat diet (D12492) fed mice. His extensive knowledge in Nutrition, Food Science, Immunology, Molecular Biology, and Veterinary Sciences provide him with strong credentials to support researchers with their diet formations and study designs.
